Sanity-Saving Slow-Cooker Chicken




Makes 4 to 6 servings


Simple, warming, and uncomplicated, this recipe provides a nutritious and healthful dinner for your family. Do not over salt or overspice this recipe. Let the subtleties of the vegetables and  simple ingredients stand on their own.

Ingredients


■  1 medium-sized onion, cut into 1-inch cubes
■  1 chicken, skinned, patted dry, and cut into serving-size pieces
■  Assorted vegetables, including carrots, celery, and scrubbed potatoes, cut into uniform chunks*
■  1 (10.75-ounce) can chicken broth

Instructions


Place the onion in the bottom of the slow cooker. Add the chicken pieces and arrange the vegetables around all. Pour on the broth. Cover with the lid and cook on low for at least 6 hours, until everythingis tender and the juices from the chicken run clear.


Cook’s Note: To facilitate the even 
cooking of vegetables in your slow 
cooker, cut them all approximately the 
same size so they cook at the same rate.
