Ingredients
■ 2 (16-ounce) cans tomatoes with juice
■ 1 (12-ounce) can tomato paste
■ 2 cups uncooked lentils
■ 2 cups uncooked long-grain rice
■ 2 medium-sized onions, chopped
■ 2 cloves garlic, minced
■ Salt and freshly ground black pepper, to taste
Instructions
ut the tomatoes with juice and the tomato paste in the slow cooker. Add 8 cups water and stir well. Stir in the remaining ingredients. Cover with the lid and cook on low for 8 to 10 hours, or on high for 4 to 6 hours, until the lentils are soft and the rice is tender. Adjust seasonings, if necessary.
